This is a stove-top method, preferably using a cast-iron skillet. The bun is all–important. What you want is a Mexican bolillo, the soft version, not the crusty one. If you can't find bolillos, you can use regular hot dog buns that are already split. Make the Jalapeno Salsa. This stuff is key. Otherwise you're just dressing your hot dog with mayo and mustard. If you want to cheat and sub, buy the hottest commercial salsa verde you can find and thin it a bit with a mix of water and lime juice. From WWL website.

Not that Cook's Country recipes are the do-all, say-all, but this one looks pretty good from a newsletter, February, 2008...Chicago-Style. Some Cook's Country Notes: Don't use a rump roast. It proved too tough and the tasters preferred the meatiness and tenderness of a top sirloin roast. Elevating the roast on a rack kept it out of the jus and kept the meat from becoming too mushy. To get the browned crust desired, the roast was browned in a skillet before adding the "rub".

Savory Cottage Cheese Pastry for Pot Pies

Years ago a company called Sweet Celebrations sold supplies for cake decorators and caterers. They also produced a magazine called The Mailbox News. I found this recipe in that magazine and have been using it ever since. This pastry is so easy to work with and it never becomes tough no matter how much you handle it. The salt in the cottage cheese is just enough to give it a great flavor. It can also be used to wrap the small cocktail sausages in for hors d'oeuvres.
