Polenta and Avocado Salad

This recipe has been a hit with everyone who has tried it, so I thought I would share it. It takes a bit of thinking ahead to get the polenta set up, but it's easy to make and goes great as a side along with pretty much any spicy and/or flavorful grilled meat. You can also substitute vegetable broth to make it vegan and serve it with grilled tempe and sambal.

"Indonesian" Chocolate Chip Cookies

The dark Indonesian palm sugar (gula jawa) is what really makes this recipe shine, however it can be rather challenging to find in the US. It comes in plugs which have to be carefully shaved down with a knife, but the incredible flavor it has is more than worth the work involved. If you can't find it at your local Asian market, dark brown sugar works decently as well.

Molasses Meatloaf

A friend of mine turned me onto the wonderful flavor of a molasses glaze that I've modified and incorporated into the meatloaf as well as on the meatloaf. (NOTE: This is a big meatloaf or two.)

Cajun Jambalaya Soup

I based this recipe on a Cajun Jambalaya recipe that I love. No tomato is one of the things that makes this Cajun. As with it's Creole cousin it features the "Trinity", onion, celery and green bell pepper. It can be made as hot as you like by using more Cayenne or Tabasco sauce. The Ritz crackers may seem like an odd pairing but, the buttery, salty flavor enhances the flavor of this dish.
