Chorizo & Black Bean Breakfast Burritos (OAMC)

Besides cereal, this is pretty much the only breakfast food I eat as I am not a morning person and these are quick to heat up every morning. Each burrito makes a tasty, balanced meal when eaten with a piece of fruit. My neighborhood Mexican grocery store sells the best freshly-made pico de gallo, so that is what I use. You can make your own, but don't use salsa as it will make the burrito filling too mushy. I also make my own chorizo for these (Miss Annie's Recipe #25846 ).

Marinated Sweet and Sour Fish

From the "Jerusalem" cookbook. This recipe is the original one that served as inspiration for Recipe #513470, except this one calls for frying the fish. There are some small variations in the ingredients, as well. The dish is best served at room temperature preferably after resting a day or two in the fridge, and eaten with as chunk of good bread. t also makes a good starter. Small whole fish, scaled and gutted, are also good in this recipe.

Cod in Sweet and Sour Pepper Sauce

This is even better if you make it a day ahead. The sauce, without the fish, will keep for 3 or 4 days in the refrigerator. Recipe by Martha Rose Shulman in the NYTimes (Dec. 2, 2013), inspired by Ottolenghi's "Jerusalem" cookbook. The original calls for frying the fish, this one oven-steams it, but the escabeche-like sauce makes both versions delicious! You can substitute sugar for the honey, if you prefer.

Mediterranean Fettuccine With Sausage

I was so fortunate to have all these flavorful ingredients on hand, which made for a lovely (and quick) dinner. The brininess of the olives and capers was a pleasant reminder of warmer climates on a cold January night!

This recipe is from the Healthy Meals in Minutes collection, group 8, Perfect Pasta, #65. The description on the front says, "East meets west when Oriental seasonings combine with a traditional Italian favorite. What a hit!"

Clam Pilaf

This is a recipe I've had for at least 30 years. My sister gave it to me way back when. I've tweaked it just a bit. Brown rice makes this super healthy, but I also like to use an arborio rice sometimes for a change of pace. This actually goes a long way and fills you up pretty well. Great for the diet-conscious.

This looked so good I must share! It could be used for chicken also with equally good results! You could use 2 chickens or half the recipe if using one. From Better Homes & Gardens magazine, November 2013.

Quick Special Quesadilla

I'm from the Imperial Valley which is pretty much home for the Special Quesadilla. Normally these can take a decent amount of time to prepare but this way is much simpler. Can be made as main course entree with beans and rice as sides or cut up for appetizers served with guacamole and salsa. The recipe is for 1 special quesadilla but I will usually make an entire package (12 tortillas) and that will be good for 6 servings depending on how hungry everyone is.

Goan Black-Eyed Peas (Slow Cooker)

From "The Indian Slow Cooker" by Anupy Singla. Goa was originally colonized by the Portuguese. Coconut milk is used frequently in Goan cuisine. This was a really delicious meal, although I am not sure about the quantity of water, see Note. Use a 5 qt slow cooker for full amount, a 3 1/2 qt cooker if you halve the recipe.
