These are really very good restaurant quality Chiles Rellenos good enough to serve for company. They can be labor intensive, but if making ahead, it can be simplified and easily put together. Pares well with retried beans and rice.

Source for this recipe is from an old Country Inns of America Cookbook. For avocado lovers, this will be a delight. The dressing pares very well with the avocado. Note the there will be left-over dressing that can be used on other types of salads. In particular it goes well with a wedge salad.

This is from Martha Stewart.com. I'm looking for more ways to eat tumeric and greens. Food.com is my recipe keeper. I'm not a fan of tofu but the kids have been asking for 1 day meatless day a week and so here goes...I used kale instead of collards and it was yummy.

Swai With Spicy Lentils

Swai is a terrific choice for those who don't like a fishy fish. It is economical, low in fat, and low in calories. This recipe is an adaptation of another I'd seen here on food.com, but I had made so many substitutions I decided to submit it so I had a more accurate picture nutritionally.
