These Vegan Meatloaf Cupcakes are not only a fun party food to serve to your guests for this upcoming New Years, they are also a kid-friendly meal to serve for dinner. With the mashed potatoes piped on top to look like frosting, what kid wouldn't want his or her dinner to look like a cupcake? If you are not vegan, feel free to mix in a little cheese and use egg instead of the chia seed. I will be trying this with flaxseed instead of chia seed.

I didn't use to like hummus but then I tried this recipe and tweaked it over time. Now it's perfect. Enough said. Don't skip roasting the garlic or you will be sleeping alone tonight! I make my own tahini by blending sesame seeds and a little olive oil in the food processor forever, then keeping it in a jar in the fridge. Also, I buy a whole bag of peeled garlic cloves from Costco, roast them in the oven (sprayed with a little oil) for about 15 minutes until golden brown, and then put the whole batch in the freezer. Then anytime I want to make hummus I just put the frozen cloves in the food processor and voila.

From ruscusine.com. Here's what they say about this recipe........ Most people associate pelmeni with Siberia, and many recipes and references to the dish call it "Siberian dumplings." Pelmeni probably did originate in Siberia, where hundreds or even thousands could be made, and then frozen and stored outside during the long winters. However, the dumplings became very popular all over Russia. They are closely kin to "pot stickers," "pierogies," and other similar dumplings found in many cultures. The Russian variety traditionally is made of flour, milk, one egg, and salt. The dough is rolled out fairly thin, and cut in circles approximately two inches in diameter. The filling is usually a mixture of minced pork, onions, garlic, salt, and pepper. I'm guessing at the number of servings and the time to make these as I've never made them before and that info wasn't provided with the recipe.

Cream Cheese Almond Cookies

These are soft and luscious cookies. Easy to make. Since the dough keeps well in the freezer or fridge they are wonderful for a last minute treat.

Baked White Fish With Mango Salsa

This is an easy and delicious way of cooking fish like Swai or Tilapia. Comes from a recipe on the back of a bag of frozen Swai, with a few modifications. I use store bought salsa - my favorite is Mango Lime Salsa but any type of Mango salsa would work well.
