| Mediterranean Light's Red Couscous Jun 4th 2013, 21:23 Another delicious recipe from Martha Rose Shulman's 'Mediterranean Light' cookbook with only a few changes. I use this quick recipe often for preparing harissa: Recipe #113468. Whole wheat couscous is my preference but standard will work of course. You will easily convince yourself that you're eating Spanish rice because the flavors and appearance are very similar. | Rating: 0 Created: Jun 4, 2013 10:23:05 PM | | | Low Carb Cheesecake Jun 4th 2013, 19:17 Preparation time does not include cooling time, which is extensive. It would be best to make this a day ahead or at the very least, first thing in the morning.............................................................. I got this recipe from a lady on the lowcarbfriends forum known as LiterateGriffin. It is the best lc cheesecake I've made. You can make a crust for this out of finely chopped nuts, butter, and sweetener but I find that I don't miss the crust................................................................. For the sweetener, you can use any combination of sweeteners equal to 1.5 cups of sugar. Artificial sweeteners sweeten best when combined.................................................................. I added the technique of using the water bath because although the cheesecake is tasty without a water bath it does tend to crack on top and the edges are over cooked. | Rating: 0 Created: Jun 4, 2013 8:17:13 PM | | | Low Carb Cheesecake Jun 4th 2013, 19:17 Preparation time does not include cooling time, which is extensive. These peppers also make GREAT leftovers! | Rating: 0 Created: Jun 4, 2013 5:32:32 PM | | | Fresh and Healthy PB&J Jun 4th 2013, 14:13 This is my favorite breakfast because it is easy to prepare and easy to eat! It can also double as a healthy snack and is much healthier than any jelly or jam--just real fruit! | Rating: 0 Created: Jun 4, 2013 3:13:23 PM | | | "Patty Cake" Omelette Jun 4th 2013, 14:13 This is a semi homemade omelet that is simply and easy to make. It's a quick and easy recipe and that's why I call it the "Patty-Cake Omelette". Reminds of the lyrics to the Patty-Cake song, "...make me a cake as fast as you can!" By using non-dairy cheeses and a California blend (broccoli, cauliflower, sliced carrots medley) of "steam-fresh" frozen veggies, this omelet is not only lactose free and rich in vitamins, but taste great too! Feel free to make substitutions with the veggies and the cheeses. | Rating: 0 Created: Jun 4, 2013 3:13:11 PM | | | Crawfish Boil Chowder Jun 4th 2013, 14:13 I made this up after looking at all the leftover corn and potatoes (and crawfish) from our last crawfish boil. The leftovers just screamed "USE US!" so I did. I usually have leftover Andouille, onion, garlic, corn, and potatoes in addition to the crawfish. If I have other stuff leftover, like mushrooms, I throw that in the stock. The good thing is, if you had anybody worth his salt actually doing the boiling, all that residual spice from the boil will come out in the chowder, so you shouldn't have to season at all! | Rating: 0 Created: Jun 4, 2013 3:13:04 PM | | | Chia Smoothie Jun 4th 2013, 14:11 I cannot handle a really thick, sweet, rich, and cold smoothie in the morning, but still wanted to try a healthy breakfast meal-in-a-drink. This suits perfect but is still filling and stays with me until lunch. Make chia gel by grinding 2 tbsp. chia seeds then stirring into 2 cups of water. This will get thick and gooey and keeps in the fridge for over a week. Depending on the sweetness of the fruit, you may want to adjust the honey to taste. Use green tea, or your favourite herbal or fruit blend. I use an immune boosting blend I get locally. | Rating: 0 Created: Jun 4, 2013 3:11:08 PM | | |
