Brussels Sprouts Gratin With Caramelized Shallots WS

Entered for safe-keeping, from Williams Sonoma. My step-daughter asked me to make this to convince her DH that Brussels sprouts were worth eating. W-S is no longer carrying the 8-oz. jars of Caramelized Brussels Sprouts, but Ina Garten's recipe seems to match the jar's ingredients listing; 1 pound of shallots will yield just over 1 cup of caramelized shallots. DH thought the red wine vinegar made these shallots "pickle-y", so I will try balsamic vinegar next time. The shallots may be prepared up to 2 days in advance and refrigerated. Given the unpredictability of Brussels sprouts off-season, I'm betting on Green Giant Steamable Brussels Sprouts, thawed: I have to SELL these sprouts to a non-believer!

Pork Medallions With Port Wine and Dried Cherry Pan Sauce

Adapted from a recipe at Serious Eats (from Cooking Light The Complete Quick Cook). Slices of pork tenderloin are quickly seared, then the sauce ingredients are quickly cooked down to make a tasty glaze. Feel free to substitute red vermouth, sherry, or another sweet red wine if you have no ruby port. Add more mustard if you want it more piquant. Go wild.

These are my attempt to make a chocolate version of Mexican Wedding Cake cookies. (My son named them.) In my experiments I felt that using half butter and half margarine made for the best texture, but you can of course use all butter if you wish.

Jello Shots: Chocolate Fudge Rum Chata Pudding

I tried these last night at a Christmas party and just HAD to get the recipe before I left. Super easy and oh so delicious! They taste just like chocolate mousse. I'm not exactly sure how many shots this makes, it all depends on the size of plastic shot glasses/containers used. I'm making a batch tonight, just for fun, but I'm going to fill parfait glasses with it for a Christmas eve dessert (for the grown-ups). I will make it the same way for the kids, only a "virgin" alternative, replacing the booze with more milk. I hope you enjoy! *Note: If you've never heard of "Rum Chata", just google it. It's a rum liqueur. (The stupid ingredient list keeps posting it incorrectly). I've drank "Rum Chata", before as a sipper, but I've also been told that it's great as an alternative to creamer in your morning coffee for a quick "hang-over" cure.

Southwestern Pot Roast and Vegetables

Adapted from a Bon Appetit recipe. Super great flavor, easy to make, and unique use of vegetables. Use an enchilada sauce with the heat level you prefer, and either white or yellow hominy (posole). You can certainly add more hominy if you like. Serve with warm flour tortillas. Chayote is a hard green squash, also called mirliton in some places. Leftover meat, if there is any, can be shredded for tacos.

This is great recipe that has been a tradition of the family for many Christmas's. Although it can be made any time of year. I normally do not use the glaze, because it is not needed. However, I have included the complete recipe.

Chocolate Chip Peanut Butter Candy Cookies

This a family favorite. The cookies have a nice crunch on the outside and soft chewy center. I make them for the holidays and use Hershey Peanut Butter Bells that are wrapped in foil.
