Green Tea Coconut Milk Ice Cream (Low-GI)
May 6th 2014, 13:48

This ice cream recipe uses a can of coconut milk. The use of eggs is optional so it can be vegan. It has a very low GI (glycemic index), so it is diabetic-friendly and ideal for anyone who is watching their weight. Please adjust the amount of sugar according to your taste. I used an ice cream maker, but it is possible to make it without it. For detailed instructions on making ice cream without an ice cream maker, please Google "How to make ice cream without an ice cream maker." Hot Chicken Wings
May 6th 2014, 13:46

Recipe from a co-worker. I've made many times over the years and tweaked to my personal taste. Can be made with either Ranch or Italian dressing mix depending on your preference. I like it both ways to mix it up since I make these so frequently. Another option is to cook the wings on the grill for 30 minutes instead of deep frying. Either way they get a nice crispy skin. If you like the flavor but it's too much heat simply tone down by increasing the butter.

G.F. Morning Cookies
May 6th 2014, 13:45

I adapted this recipe from the Morning Glory Breakfast Cookies I found here on Food.com. I needed something yummy and a little healthy to hand my kids on the way out the door. They are a fluffy, almost scone or muffin like texture. Enjoy.

Greek Yogurt Strawberry-Banana Smoothie
May 6th 2014, 13:44

Greek yogurt smoothies are pretty basic if you know how to flip a switch on a blender. You basically toss all the ingredients into the blender, turn it on at a high-speed (obviously with the cover on), and wait 20-30 seconds before turning off. That's it. Having packaged frozen berries on hand makes it super easy so you don't have to cut and freeze the fresh berries. The blender clean up will probably take longer than making this delicious smoothie.

Low Fat Crockpot Apple Rings
May 6th 2014, 13:39

Sweet & cinnamon-y! I concocted this recipe when I wanted cooked apples but needed to do dinner prep ahead of time. And I didn't want a large amount of 'sauce', and didn't want butter in it! *Don't overcook this- the liquid will disappear and the apples will turn to mush. Keep an eye on it the first time you make it and record the cooking time!
