From The Nourished Caveman/Vivica Menegaz. Low carb. Recipe calls for Stevia. I prefer honey, but I think this would make it too goopy to harden, so I went with the Stevia. Cook time is chill time.

Coconut Ice Cream

Coconut milk, honey and vanilla are the perfect combination to create this smooth, refreshing ice cream. I feel honey and vanilla really enhance the natural coconut flavor. I like to use vanilla bean paste because I love to see the tiny speckles of vanilla beans throughout the ice cream, but vanilla extract would be fine as well. My kids went bonkers for this ice cream--and to be completely honest, I did too. :)

Slow-Cooker Chile Con Queso (America's Test Kitchen)

A word from America's Test Kitchen: "Chile con queso has fallen on hard times; often it's just Ro‐tel diced tomatoes and chiles mixed with Velveeta, microwaved, and stirred. We wanted to keep the simplicity but ditch the plasticky flavor and waxy texture. We started with a base of chicken broth, cream cheese, and cornstarch to help stabilize the cheese and prevent it from breaking. For the cheeses, we chose Monterey Jack for its great flavor and American cheese for its superior meltability. We kept the classic Ro‐tel tomatoes but bumped up their flavor even more with garlic and canned chipotle chile." Recipe from "Slow Cooker Revolution Volume 2: The Easy-Prep Edition".

Chive Blossom Crackers (Whole Wheat)

These would be perfect for a cheese board, brunch, tea, and to give away as small gifts. My chives were flowering and I wanted to do something different with them, and the results were both beautiful and full of flavor. No chive blossoms, no chives? This is a flexible basic recipe--you can easily swap the seasonings for what you'd like and have on hand. Just decrease the water a bit if you add something moist (olives, shredded cheeses, etc.). Keep in an airtight container at room temperature.
