Awesome chicken enchiladas that my entire family loves. Great flavor and easy to prepare. I usually serve with a side salad or Spanish rice. Although verde sauce on it's own has some heat it is very mild when prepared with chicken in this dish.

Potato Salad With Pancetta, Rosemary, and Lemon

Lemon peel and lemon juice, rosemary, and an olive oil dressing give this a nice lightness. If you prefer a creamy potato salad, use 2/3 cup mayonnaise in place of the olive oil. Honestly, this is best if made the day before and allowed to rest overnight.

From "Baking Sourdough Bread" by Goran Soderin and Georgel Stachal. This is a very interesting new book that explains the sourdough process very well. I have not yet made this bread, but hope to, as I just love rye. Prep time does not include the rising time. The dough requires two days to make! These have to be rather small loaves, given the amount of flour.

Pecan Rum Tart from the Old Inn on the Green

The Old Inn on the Green in Marlborough, Massachusetts makes this delicious variation on pecan pie that has a puff pastry crust and a crunchy rum-scented filling. It is glazed with apricot and dusted with confectioners sugar. I've provided directions on how to blind bake pastry crust. It is long and packed with detail, but don't let it scare you. It's pretty easy to make, but figured that the detail is needed for those who haven't blind baked pastry before.

From "Baking Sourdough Bread" by Goran Soderin and Georgel Stachal. This book is very informative regarding sourdough baking. These rolls are slightly sweet - I have not made them yet and times are estimated. Rising time is not included below, but is about 1 1/2 hours.
