Cheezey Broccoli & Cauliflower Soup

Hearty amounts of potatoes, broccoli, cauliflower and red bell peppers surrounded in a rich sharp cheddar-like broth. Beneath the cheezieness a hint of red pepper and marjoram to brighten it all up. From My Vegan Cookbook.

Perkey's Baked Rabbit

When we moved to the country, we had a kind neighbor that welcomed us and shared knowledge with us. He had raised meat rabbits for many years and was very excited when I showed interest in cooking one up. Mr. Perkey shared this recipe with me, and while I've tried other rabbit recipes out there, I really enjoy this one the best. Maybe it's homage to his memory - he passed away November of 2012 - but me, my husband and three little ones all gobble this up.

Roasted Winter Vegetable, Chicken, and Chile Soup

The color and flavors will knock your socks off! I adapted this from a recipe by Danielle Walker on the Against All Grain blog. It's great on a cold winter night with some crusty bread or some tortillas. You can omit the chile if you don't like spiciness, or just substitute a milder chile. Start with raw chicken or use leftover cooked chicken, if that's what you have on hand. But by all means, use a good stock, not broth, preferably homemade! Duck stock or goose stock could also be used. Make sure you have enough of the diced cooked vegetables in the soup to give a nice texture to the finished soup. Err on the side of more than half, if necessary. I use Tia Rita chipotle seasoning blend, which is available online at http://newmexicospecialtyfoods.com/nosaltseasonings.htm., but a small amount of canned chipotles in adobo can be used instead.

Hercules' Soup

In January of 2014 we had an awful snowstorm. This is not unusual in Michigan, but neither is the runs on a store. This is the soup my daughter and I made by picking up the leftovers of the people hoarding ingredients that will show up in 3 days... 3 rules to Hercules' Soup: (1) shant be no white beans! (2) Spinach is optional!!! (3) You must include tortilleni!!!

Takes the typical shredded zuchinni patty one step further with the additon of flakes of grilled tuna and parmigianno regianno cheese. The key is to thoroughly squeeze the moisture from the shredded zuchinni to preserve the crispy texture of the paties.

Thai -Ish Cabbage Soup

Based on a Thai recipe for Thai Cabbage Roll Soup found here: http://jazzieandtahlia.typepad.com/my_weblog/2011/09/cabbage-roll-soup.html. Dashida is a Korean beef bouillon powder found in my local Oriental Market. I have a huge pouch of this stuff so I decided what the heck and it worked.

Czech Open Faced Sandwiches/ Oblo?ené Chlebí?ky

These open faced sandwiches are a New Year's Eve tradition in the Czech Republic & Slovak Republic. I only prepare these once a year and that is on New Year's Eve, as was done when I was a growing up and I have always kept it that way. But of course these can be prepared for any sort of occasion. I have added the recipes for some of the more traditional toppings. Feel free to use any other toppings you desire. A few others are, small slices of smoked pink salmon, quality cream cheese or Liptauer spread instead of butter or the mayonnaise and try adding sliced pickled baby beets, which are delicious! Dobrou chut'!
