Serious Eats Chicken Tikka Masala - Maybe the Best
Jan 10th 2014, 20:47

Entered for safe-keeping, by J. Kenji Lopez-Alt of Serious Eats, touted as "The Best Chicken Tikka Masala". Adapted somewhat. He gives 2 ways to finish cooking: on the grill or under the broiler. He recommends pulsing the peeled ginger and garlic in a food processor instead of box-grating them. Can't wait to try this! He recommends bone-in chicken because the meat (especially breasts) is less likely to overcook. For best taste, toast whole seeds and then grind in a spice-dedicated coffee grinder. Preparation time includes 4 hours for marination.

Five-Spice Pork Bolognese Pasta
Jan 10th 2014, 17:39

Originally from Longview News Journal http://www.news-journal.com/features/food/easy-pork-bolognese-for-nights-when-jar-sauce-just-won/article_3a14725f-17bc-5bbc-9982-57ddde485c12.html This Bolognese is mostly effortless. You can make it even more so by using the food processor to chop your vegetables. Just toss them all in at once, then pulse until finely chopped. As for the meat, pork is delicious, but feel free to substitute beef, veal or turkey.

Simply Wonderful Low Carb Sloppy Joes
Jan 10th 2014, 14:25

Our family has always enjoyed my mother-in-law's simple recipe for Sloppy Joes, but now that I am eating low carb, I needed to change it up. The changes I made seem to work very well and it is still very easy to prepare with easy to find ingredients. I make my own sugar free ketchup, but most stores carry them now. If I don't have some low-carb bread or a low carb tortilla, I will wrap it in a lettuce leaf or sprinkle it over my green salad for a heartier and tasty luncheon salad.

Applesauce - 2-Qt Pressure Cooker
Jan 10th 2014, 14:17

Entered for safe-keeping, from "Quick Cuisine" by Kuhn Rikon. The original recipe did not call for peeling and coring the apples, only cutting them in half and placing skin side down for cooking; it used a food mill, in which the cooked apples were milled until only the skin and seeds remained. You can make your own mulling spice mix on your own (cinnamon stick, allspice berries, whole cloves, peel of lemon or orange) or use either Recipe #106470 or Recipe #261521. I like Gala apples for applesauce; these were recommended by Kuhn Rikon: Northern Spy, Jonathan, Winesap, McIntosh and Gravenstein.
