Portuguese Squash (Or Pumpkin) Fritters - Forevermama

My mom used to make fritters much like these when I was growing up and it evokes great memories for me. Unfortunately she never measured anything and she didn't leave written instructions for her recipe. So I've been searching and experimenting fritters that resemble hers. These are close. She would make these when she had leftover squash. She never did make them with pumpkin, but made them using buttercup squash. I made these using leftover buttercup squash from Christmas dinner

Basic Thick Cashew Cream

This is a delicous cashew cream that can be used to replace sweetened condensed milk, or used as a luciously thick dessert topping. You'll find ways to use it... It comes from a cookbook called Vegan Chocolate by Fran Costigan. She's a dessert genius and I highly recommend her book!

Vegan Graham Crackers

Homemade graham crackers are actually easy! Here is a recipe from Fran Costigan from the best cookbook ever: Vegan Chocolate. Seriously, buy that book. The recipes and photos are all outstanding. This recipe doesn't call for graham flour, because not everyone has that in the cupboard, but toasting flour first has the same effect. It also calls for regular sugar to be ground in a blender until it becomes powdered sugar. That's because purchased powdered suger has corn starch in it and changes the texture. But I think you could probably cheat. If you are making these for crumbs, it makes about 2 cups.

Entered for safekeeping, by Madalene Bonvini-Hamel of The British Larder. The recipe's name tickles me. I imagine snacking on these in front of a soccer match with a fine ale. Bring out the mandolin, the deep fryer (or spray them with nonstick spray and bake them in the oven if you must), and a cream whipper (which needs 2 Nitrous Oxide pellets). (If you don't have a cream whipper, you could whip with a hand mixer or stand mixer, it just won't be as chic. But if you were looking for an excuse to get a professional cream whipper, here it is.) (See Recipe #13526 for directions to microwave the potato chips.) This may be made into a Vegetarian dish if agar agar replaced the gelatin. There! You have made gourmet potato chips! Eat with attitude!

Easy Spicy Crockpot Black-Eyed Peas

Zesty black-eyed peas in an easy crockpot recipe make for a delicious meal to come home to! We always have black-eyed peas on New Year's Day. You can use canned black-eyed peas as well, and shorten cook time by half... but give the dry beans a try! You'll know what went into them and be impressed at how very easy it is to cook them.

Pork Fried Rice in Cast Iron

Hardy and Delicious!!! I use my leftover pork chops and my old seasoned cast iron skillet. Using it in a super hot oven gives food that pan seared flavor without all that extra fat to fry it in! Hardy enough to serve as a main dish. My husband loves it!!!
