This the best soup to warm you up on a cold evening. It has a thick & hearty consistency that makes it a satisfying family meal. Doesn't cost much to make as you can use the cheapest cuts of lamb or mutton (whatever is available). I used Lamb shank in this recipe but I often use cheaper cuts and the results are just as good. Tastes even better the next day as the barley gets softer.

Broiled Skinless Chicken Hindquarters With Italian Seasoning

This is my best invented recipe yet!I was looking for a new way to cook drumsticks and didn't find anything that appeals to me. So I decided to combine few of my favorite ingredients (Italian seasoning, garlic and soy sauce) and the result is super delicious. Tips: You can adjust how much of the seasoning or garlic you use just don't use too much lemon juice you don't want it to taste sour.

Tunisian Couscous With Fennel, Red Peppers and Garlic

A Paula Wolfert recipe. The melange of dill and fennel, celery leaves, red pepper flakes, and spices makes for a light and delicious couscous. Since this type of couscous tends to be slightly dry, you may want to serve it with glasses of buttermilk, the traditional way. I adapted the recipe to make without a couscousier.

This is my grandma Buzzetta's infamous rice that goes great with so many things or is excellent to use for stuffing chicken breasts or fish. My mouth waters just thinking about it.

The recipe comes from Living Without. It is loaded with tons of wonderful fresh vegetables. If you can boil water you can make this wonderful salad. When cooking gluten free, please read labels carefully. Costco has gluten free rotisserie chicken.

Caramelized onions are great for so many things -- and healthy, too... cardamom is a delicious, subtle spice...a great substitute for cinnamon in apple pie, too...

From Sarah Ainley's book, The World's Best Recipes, Caribbean section. "This dessert is a delicious family favorite. A richer version can be made with fresh cream instead of evaporated milk. It can also be made using other dried fruit – mango is particularly good." Cook time does not include the 30 minutes standing time.

From Sarah Ainley's book, The World's Best Recipes, Caribbean section. "When plantains are yellow, they are ripe and ready to enhance most meat, fish or vegetarian dishes. The riper the plantain, the darker and sweeter they are." The amount of oil is just approximate; use just what you need to get the plantains fried.
