Toasted Coconut Shortbread Jul 26th 2013, 22:56 Cooking time doesn't include toasting the coconut or chilling the dough. You can serve these plain or dipped half in chocolate or fill them in pairs with raspberry jam, lime curd, nutella, or my new favorite (which I found at Sugar Pill in Seattle) Hey Boo coconut jam. The actual name of the recipe is Pargo Rojo Al Vapor en Hojas de Platano. Pargo is a fish very similar to the Atlantic Red Snapper. Banana leaves can be found frozen at most Asian markets. Caldo Maggie can be found in many grocery stores, but certainly in a Hispanic market or you can substitute soy sauce. The bananas impart a unique flavor to anything that's cooked in them. Coconut oil can be found at Trader Joe's, Costco, and most major grocery stores. I added the coconut flour to sub for the whole wheat pastry flour. | Rating: 0 Created: Jul 26, 2013 11:26:55 PM | | Coconut Bread Jul 26th 2013, 22:14 My adaption of Coconut Bread based on several sources trickling down to SmittenKitchen. She wrote "This loaf, once baked, entirely filled and towered above my 9x5x3 (8-cup) loaf pan, so if yours is smaller, you might want to pour off a little batter into greased muffin tins. The crumb is more coarse than banana bread, and less squishy-moist. Also the texture changes from the dark crust to the tender center that makes this bread excellent toasted with a pat of butter and sprinkling of powdered sugar. | Rating: 0 Created: Jul 26, 2013 11:14:53 PM | | Dulce De Banano Jul 26th 2013, 22:00 This is a recipe for banana preserves from a Cuban cooking blog. I've not made these, so don't know how they'll set up, but the combination of bananas, lemon, and orange sound divine! The blog is in Spanish so I had to convert measurements as best I could. The recipe calls for bananos (bananas), but you can also use plantains for a completely different flavor (see note). | Rating: 0 Created: Jul 26, 2013 11:00:43 PM | | Asian Nappa (Aka "Napa") Cabbage Salad Jul 26th 2013, 21:16 No nasty ramen noodles, thank goodness! Inspired by a recipe from Food & Wine. If you are having a spicy Asian protein, this will be a cooling side. If you prefer a wetter salad, make more dressing, but it will moisten the cabbage if it sits for a half hour or so. Taste before to see if it needs more vinegar, as it's not highly acidic. We served it alongside grilled Asian eggplants that had a spicy, garlicky miso glaze, brown rice, and watermelon fingers. Garnish with some toasted nuts or seeds (sunflower, pepitas) for some crunch. | Rating: 0 Created: Jul 26, 2013 10:16:07 PM | | Blue Mountain Cocktail Jul 26th 2013, 20:04 This recipe was named after Jamaica's highest mountain range, famous for coffee grown there. It is also claimed by the Blue Mountain Inn, one of the island's premiere restaurants. Recipe is out of the Island Cooking cookbook. | Rating: 0 Created: Jul 26, 2013 9:04:20 PM | | |
