I used a special pan from Pampered Chef, but a jumbo muffin tin will work here too. I use a frozen pepper stir-fry mix which is essentially green, red and yellow peppers and onions. Using it frozen helps keep the meatloaf moist. This recipe is so versatile. You can customize each meatloaf by adding pepperoni, spinach, mushrooms, olives, bacon, etc. in the middle! | Rating: 0 Created: Oct 13, 2013 10:06:03 PM | | Oven-Dried Cinnamon-Sugar Apple Peel Chips Oct 13th 2013, 17:37 While making a large pot of applesauce, I chose not to discard the nutrient-rich peels but instead bake them into apple chips. It turned out to be an deliciously successful experiment. These apple chips are lightly sprinkled with cinnamon-sugar and oven-dried on parchment paper. To ensure even drying, it's important to make sure the peels are of equal/uniform thickness. Thicker peels will take longer to dry, and you need them to be completely dry for food safety reasons. For best results, use a counter-mounted spiral apple peeler; or just keep an even hand while peeling your apples. My family enjoyed these crispy treats, and I hope yours does too! | Rating: 0 Created: Oct 13, 2013 6:37:11 PM | | Hemp Granola Seed Cookies Oct 13th 2013, 17:16 A very chewy cookie with the taste of maple syrup that would go well for snack time | Rating: 0 Created: Oct 13, 2013 6:16:22 PM | | Ginger and Rhubarb Loaf Oct 13th 2013, 15:46 This unique bread recipe contains a delicious blend of flavors, including fresh or frozen rhubarb, golden raisins, fresh ginger, and coriander. I serve mine over corn chips, topped with shredded cheese and sour cream. This an easily modified recipe to suit your taste, time and available equipment.
