This is another intriguing recipe from Farah's Persian Cuisine, pg 112. I have included soak time in prep time below, I suggest using that time to prep herbs and veggies. Cooking time is estimated.

This recipe comes from Persia and I have taken it from 'Farah's Persian Cuisine, pg 24.' My workmate is from Persia and gave me the cookbook, it is simply gorgeous and the author has added a lot of interesting detail about the region in the book. I have included soak time in this recipe. I would suggest using the tail end of your soaking time to prep everything. I would also do the frying parts of this meal whilst the pot is boiling.

This is what my grandma would give me when I had no fight left in me...lol But, that being said, it breaks up the phlegm from bronchitis or head colds, it really does! So when your desperate for relief...this is the one!

Lebanese Spinach and Lentil Soup

This has fantastic flavor--absolutely love this. Feel free to substitute fresh chard for the spinach or mint for the cilantro. Serve with tzatziki and bread and/or a tomato salad. I used fresh spinach and doubled the recipe. Recipe courtesy of Spilling the Beans.

Softest Ever Bread Machine 100% Spelt Bread

Original recipe from this website - Softest Ever Bread Machine Bread by KC_Cooker, modified to use spelt flour, and my Black & Decker Bread machine with a 3 lb. loaf pan. This loaf almost fills the pan. Note: The rapid bake cycle on my bread machine is approx. 2 hours long. I have noticed that some bread machines have a super rapid cycle of approx. 1 hour. I doubt this recipe would work on a super rapid cycle. (Note on nutrition values: the nutrition values for the spelt flour is not included in the nutrition table. It appears Food.com does not have spelt flour in their database.)

Tasty side dish or vegetarian entree, adapted from 'Eat Your Vegetables'. There are several recipes on Food.com for the Za'atar spice mix, or you can purchase it at spice shops (I bought it at www.savoryspiceshop.com).

Butternut Squash and Pear Bread (Quick)

I love a good pumpkin bread, but what I love even more is experimenting with different squashes in my breads. This can certainly be made with pumpkin, or acorn, or other squash. I planted butternut this year and had a bumper squash and I have a pear tree and together they made a beautiful bread! The addition of the pepitas (pumpkin seeds) adds an amazing depth to the bread.
