Had leftover Roquefort from a salad and just had to find a wonderful use for it! Also, pasta was buy one, get one free at my local grocery. Thus, a star is born!

Kale and Onion Mini Biscuits

The first version of this salad that I ever made, from "The Japanese Cooking Class Cookbook". I think it's still my favorite version. If you don't have 2 tbsp. of dashi on hand (and who does?), or want a vegan version, use vegetable stock or water instead. NOTE: Sesame seeds love to pop right out of the skillet; I'd recommend using one with high sides or even a medium saucepan for toasting them.

Stuffed Bell Peppers - Hardcore Paleo

This is a hardcore Paleo recipe (Loren Cordain's style of the Paleo diet). No salt, no sugar, no processed foods (i.e., nothing canned), no dairy, no grains, no yeast, no starchy vegetables. Yet delicious!

Clark's Chocolate Chip/Oatmeal Waffle Cookies

My friend Clark made these cookies for an Oscar party. His theme was The Waffle of Wall Street. He won first prize so I decided to try them. So yummy. He used chocolate chips and butterscotch chips. I subbed mini peanut butter Reese's Pieces, since I didn't have any butterscotch. I also used half white and dark brown sugar, since I didn't have any light brown sugar. This recipe is great for summer - you don't have to turn on the oven! Don't make them too big. I baked them 8 at a time on my waffle iron and got around 40 cookies.

Vitamin Rich Potato Salad

This potato salad has been made in my family since I remember my self. It's a great alternative to your mayo base potato salads. I have named it vitamin rich because It's using a whole bunch of parsley and lots of raw apple cider vinegar and delicious red onions. Hope you enjoy it as much as we do.

Low-Fat Rosemary, Red Onion & Parmesan Focaccia

From the Recipe Book "Crazy Plates", this flat bread is a lovely change from your standard crusty rolls or french bread - it pairs great with a spaghetti or other saucy pasta main. DH and I are also terribly guilty of smothering slices with butter and eating the bread as a snack the next day as it re-heats quite well. I've made this with leftover mash, garlic and cheese mash, parm and chive mash, skins on, skins off - it works with anything! I also tend to add quite a bit more parm.... Prep time includes rising.
