Almond flour waffles that are great with syrup or can replace the bread on your sandwich. I've only made these in a classic waffle iron so I'm not sure if they will rise enough for a Belgian waffle iron.

Pork and Veggie Casserole

This is adapted from another leftover meat casserole. After experimenting, I find this combination of ingredients to be to our liking. You can use either chicken or beef broth, and for the meat I found that pork or lamb works best.

A sauce to dip cold cooked buckwheat noodles into, from Susan Fuller Slack's "Japanese Cooking". This makes a lot of sauce, but can be easily divided.

Zoom Granola

I was sorting through my old recipe box from when I was a child and found this recipe I cut from a box of Zoom cereal. After x amount of years I'm finally getting around to testing it and loved the recipe and hope you do, too! We enjoyed this granola the traditional way in a bowl of milk. But I also composed a muesli bowl with plain whole milk yogurt, 1/4 cup of Zoom granola, squirt of maple syrup, splash of coconut milk and a pinch of cinnamon. Experiment with other favorite seeds, nuts and dried fruit. Vegan!

Irish Flag Salad

I was deputed to make a salad for a small St. Patrick's Day celebration and found the following through a google search. It has nothing whatsoever to do with Ireland -- other than being the right color scheme -- but it was a big hit! Nice combination of textures and flavors.

Slow Salmon Fillets With Greens, Chickpeas and Caper Vinaigrette

A generous one-dish meal from the oven adapted from a Bobby Flay recipe in Bon Appetit. Do NOT use bagged, chopped greens for this, the tough stems in the mix will ruin it. Get whatever whole greens look best on shopping day: mustard, chard, kale, spinach, etc. You may need to just the saute time for the greens depending upon how tender they are. Use extra Caper Vinaigrette on cooked chicken or a salad.

Adapted from Susan Fuller Slack's "Japanese Cooking". The dressing is equally good over other cooked vegetables like broccoli or zucchini.

Tonkatsu (Fried Pork Cutlet With Spicy Sauce)

Another take on pork tonkatsu, this one with a recipe for the sauce, in case you don't have access to Bulldog Sauce. This one is from Susan Fuller Slack's "Japanese Cooking". Restaurants in Japan that specialize in tonkatsu are very popular. A serrated bread knife is the easiest way to shred the cabbage. If you don't care for raw cabbage, it can be lightly stir fried before mounding on plates.

Baked Spicy Snapper With Rice Noodles

This recipe is quick to make, and delicious. I found it while searching for recipes to enjoy while I am on a low Fodmap diet. If you are also on one, eliminate any ingredients that are triggers for you. I found it on Pinterest by an author named Stephanie. Don't know who she is because it wasn't on her board. :)
