Chilaquiles With Chicken, Tomatoes, and Cheese
Nov 16th 2013, 19:26

This might be considered a "Mexican lasagna." Layers of tortilla chips, sauce, chicken (or other meat), and, of course, cheese, bake into a tasty casserole. This is an excellent dish to use leftover chicken, turkey, beef, or hamburger. Or you may want to cook up meat specially to use in this casserole. Either way, you'll be delighted with the meal that results. Recipe is from "Dad's Own Cookbook" by Bob Sloane.

This technique produces a light, flaky crust. The secret is vodka.

Traditional Apple Cobbler
Nov 16th 2013, 17:38

Traditional style cobbler with a sweet buttery biscuit type topping. Adapted to our taste from a recipe by Land O Lakes. We don't care for crumbles or cobbler recipes with oats. After searching high and low and testing many different recipes, this is the clear winner. Posting for safe keeping.

Breakfast Sausage Casserole
Nov 16th 2013, 13:24

I like to do this for Christmas morning instead of standing at the stove, and thank goodness - everyone goes for seconds! Sausage, eggs, bread, and cheese snuggle down in a casserole, chill overnight, and bake in the morning. It's a hearty dish worth waking up for. This is the BEST breakfast casserole ever! I have made it several times for Christmas. This past weekend was my daughters high school prom and our house ended up being the "after party". I put out a spread for them including this casserole. The kids raved about it! My daughters bf asked me when I was going to make it again! So...I will be making it again this weekend! LOL! That was over 31 years ago !

Mom's Mexican Mess
Nov 16th 2013, 12:03

It may look a mess, but it's a very useful mess of food. You can eat this as is, spooned over cornbread and topped with olives and sour cream. Or spoon it over a pile of tortilla chips with the same toppings and eat like nachos. You may serve in a bowl as a dip or spoon onto flour tortilllas and roll for a burrito. You'll probably think of other ways to serve it also. Recipe from Gooseberry Patch.

Pumpkin Bread
Nov 16th 2013, 09:28

The classic moist pumpkin bread is spiced with cinnamon, ginger, nutmeg and cloves. This bread improves with age, so plan to make it a day ahead if possible.

Mum's Peanut Buttered Spinach
Nov 16th 2013, 04:28

Growing up my mum made this almost weekly during spinach season - frozen spinach won't work. Sliver beet will work (not sure what this is called in USA). Crunchy peanut butter is a MUST.

Fruity Coleslaw
Nov 16th 2013, 04:13

Not your regular slaw - crunchy apples, sweet grapes, tart orange segments and toasted almonds makes this a bit special. No mayo here - yoghurt is the "dressing" making this recipe much lower in calories than your regular slaw. Chilling time is cooking time.
