Baked Mozzerella Sticks with all the flavor of deep frying. Freezing them is a MUST, I always leave them in for at least an hour before and after breading. To avoid cheese explosions cut cheese sticks into smaller "bites".

Nabisco's version of this old favorite cookie may not be as big a seller as its much-cloned Oreo. Heck, it's not even close. But if you're a ginger snap fanatic, this recipe will give you a killer clone of the cookie giant's store-bought version that you can whip up in a...uh...snap. And if you're watching the fat, four of these cookies check in with a total of around 2.5 grams of fat. I like to add a touch of fresh ginger to this cookie dough. I also refrigerate the dough overnight to make it easier to scoop. I found this recipe at Top Secret Recipes.

Key Lime Coconut Energy Bites

I originally found and made this recipe for my SIL, who can't have sugar, but it turns out the whole family is crazy for these little bites, You might also try switching out the key lime ingredients with a tablespoon of unsweetened baking cocoa; yum! Double-check your dates for pits - they are hard on a processor blade!

Italian-Style Greens Soup With Arborio Rice

From "Brassicas" by Laurel B. Russell. Greens substitute for the more familiar escarole in this soup. Alas, the rabbits found my Chinese broccoli, so this will have to wait until I get to market. I anticipate possible reducing the amount of salt.
