This is the closest rendition o fthe actual Green Sauce from Casa Ole that I can find. Don't be afraid to blend it for a while to make everything as smooth as possible.

I've been making this for years and love it. The original recipe called for 1-2 tsp of salt, which I found to be too much. A full teaspoon of the chili paste (I use Lan Chi Chili Paste With Garlic from my local Whole Foods but you might be able to get it at a local Asian/Chinese grocery) is pretty hot but as I like it. Adjust as you see fit. Different brands will have different heat. I've served this on cucumber slices, in endive leaves, and molded in a ring on a plate. Sometimes I garnish with black and/or white sesame seeds.

ere is the tried and true recipe for red velvet--just use blue instead of red. The chef I learned this from was professionally trained and threw around the name Nick Malgieri as her teacher. Who knows. I do know it is good and it called a high ratio cake due to liquids vs flour. Dont let that scare you off if you have never heard of it . It is an EASY cake but BIG(tall) and it will NOT be dry

My mother just went on a "cardiac diet" and I saw this on the American Heart Association website. It takes minutes to prepare, is delicious, and healthy. I served with a dollop of dill sauce on the side made of sour cream, Dijon mustard, dill and lemon. I didn't use the liquid - maybe next time.
