Simple and earthy, a mandolin makes it simple to slice the vegetables evenly. This would go well with any simply cooked protein or could be a vegetarian entree.

I was wondering what to do for dinner without going to the store when I came across this recipe from eprcurious. I was a little doubtful of a lettuce mint salad but it worked well with these chops. Times do not include rest time.

Peach Basil Boost
Sep 1st 2013, 15:00

Peaches, which are peaking right now, are high in antioxidants like vitamin C and lycopene, making them a beauty food and an immune-system booster. So if stress from the week (or packing for vacation) is making your skin dull and your head throb, let the free-radical-fighting fruit give you a boost. Basil elevates both the flavor of the fruit and your mood with its anti-anxiety benefits. And coconut milk creates a creamy, tropical swirl and lends even more calming benefits thanks to 89 mg of magnesium per cup, ideal for getting a good night's sleep. From Well and Good.

Greek Mahogany Potatoes
Sep 1st 2013, 11:31

This is one of those "you gotta have faith" dishes -- yes, the potatoes will eventually turn mahogany; yes, contact with the hot potatoes will cook the onions just enough so that they lose their rawness but retain a nice bite; yes, you won't regret using a generous handful of salt. Be sure to allow yourself several hours' cooking time, throw in whatever fresh herbs you have on hand, and don't hesitate to pull the potatoes before they're truly mahogany if dinnertime is fast approaching and you're satisfied with their heft and flavor. Found this on Food52 and this was written by Kukharka.
