In a house where people have food sensitivities and are trying to lose weight, it's hard to please everyone with a single dish; this worked wonders. When you use your canned salmon, be sure to get skinless and boneless to save time. This could also be used as a dip or spread for crackers and crudit�s.

Radish Salad

A delicate, light dressing. Use the food processor to slice the radishes quickly. From "Diabetes Cooking for Everyone", by Carol Gelles. Exchanges: 3/4 vegetable, 1/2 fat, zero fat if fat-free mayo is used.

Shrimp and Cucumber Salad

Serve on a bed of lettuce if you like. Adapted from"Diabetic Cooking for Everyone", by Carol Gelles. Exchange: 4 very lean meat, 3/4 vegetable, 3/4 fat. If fat-free yogurt and mayonnaise are used, fat exchange becomes 1/4.

Light As Air Cheesecake

NOT New York style cheesecake! Good with fresh berries. From "Diabetes Cooking for Everyone", by Carol Gelles. Exchanges: 1 lean meat, 4 1/4 fat. If fat-free cream cheese is used, exchanges are 1 very lean meat, 1/2 lean meat, 1/4 other carbohydrate, 3/4 fat.

Low G.I. dessert, from "Diabetic Cooking for Everyone", by Carol Gelles. Exchanges: 3/4 lean meat, 4 3/4 fat. If you want a firmer product that will keep longer, use one of the recipes for stabilized whipped cream as the base.

Minestrone With Chicken

This is my variation of clearing out the fridge with what I had and it turned out great. The prepping time includes the soaking of the beans overnight, you can cut this down by using canned cannoli beans. I just love the acini di pepe pasta, its so TINY and really makes the soup This is a great way to take a small amount of ingredients and really stretching it to feed several people! Serve with some crusty bread and maybe a salad and a nice glass of wine!

Pecan Baked Apples

Use any type of apple you like, except Granny Smith, as they do not soften well. Bake in a 375 degree oven about 35 minutes if you prefer. From "Diabetes Cooking for Everyone", by Carol Gelles. Exchanges: 1/4 lean meaqt, 1/2 fruit, 1 3/4 fat.

Walnut Apricot Bites

Hummus

This is from Melanie Kerwin's Facebook page. She posts a lot of neat recipes. Although there are many other Hummus recipes on this site I didn't find any as unique as this one. Other recipes call for Cumin so I added it as an optional ingredient. https://www.facebook.com/melanie.landaukerwin

Fried Rice With Beef

I came up with this recipe tonight when I was cleaning out my fridge and realized I had leftover corn, cooked rice, and 1lb of ground beef that needed to be cooked soon! Even my young boys enjoy this concoction, and I hope you will too. The cooking time is just an estimate, I wasn't keeping an eye on the clock.

Cucumber Salad

There are tons of different cucumber salad recipes this one more reminds me of the tomato salad recipes with the exception of there are no tomatoes in the original recipe. So I added them as an optional item. I also got this on Facebook it was shared from a closed group.

Sweet and Spicy Cayanne Lemonade

This is a delicious, spicy lemonade that must be made with fresh lemon juice. It was originally intended as part of a diet/cleansing program where the dieter ingests solely this lemonade for two weeks (save for salt water flushes and herbal laxative tea). None of that for me! I just love the lemonade!
