I love lasagna! Pretty much any kind of lasagna, too! You know what I don't like? Bland, flavorless lasagna. Whenever I try a frozen lasagna from the store - I think "who likes this? It has no flavor!" So... now I make my own. This is just one version of many that I like to make. Try it!

Roasted Sweet Potato and Blue Cheese Salad

WOW! Got this one from Cocina Facil magazine, it was really yummy. I did not have pine nuts (OK, I have them just couldn't find them in the freezer. Am I the only one?) Since the little camotes I had were so sweet I did not use the sugar.

I've always been looking for the bbq sauce recipe that's right for me. After browsing through several, trying a few and experimenting some, this is what I come up with - sweet, tangy, and a bit spicy. I like to use it when I'm making a slow cooker Pot Roast.

This is my signature version of a classic recipe which lends itself easily to a great deal of versitility and creativity. I never make it exactly the same way twice. When asked if it is intended as a dessert or side dish, I say "any time you like it". I often eat it as a meal for breakfast or lunch or for a snack.

Gluten-Free, Dairy Free, Egg Free Pancakes

I work at a camp, we are always having folks come to camp with different allergies. This recipe will accommodate three allergies. I made it up and it works good, can also be used for making muffins, just add your choice of fruits. When making this recipe, be sure and sift all dry ingredients; and mix them first,, before adding liquid ingredients. Water measurements may vary, depending on consistency. If u prefer thicker pancakes, you may want to add less water.

Chicken, Tomato and Spinach Stew With Chickpeas

I created this one afternoon when I wanted to make something hearty and flavorful for my Marine husband who had spent the week in the field. The flavor base comes from a sauce in Deborah Madison's Vegetarian Cooking for Everyone. To make this simpler and faster you could certainly use prepared chicken broth and boneless, skinless breasts or thighs.

Salmon-Leek Hash With Poached Eggs

From The Big Book of Breakfast, 2003, by Maryana Vollstedt. Canned salmon can be used; drain and remove the dark parts and adjust the amount of salt. This would be great for dinner, too. Prep time includes cooking potatoes.
