These one-bite appetizers are easy to make, using only a few ingredients and taste amazing. The recipe calls for oyster mushrooms but I imagine you could use shitake. This is succulent, smoky, rich and salty—and perfect to make for a small dinner gathering or as a starter for two. From Olives for Dinner.

Oven Baked Omelet With Roasted Pepper Sauce

This is a super easy brunch dish that doesn't require a lot of cooking. It's versatile and you can use various vegetables and herbs you have. For example, instead of the vegetables I used, you can also use white mushrooms, green peas, green onions, green peppers, red peppers, broccoli, spinach, asparagus, sweet potatoes/yams, pumpkin, summer squash, seaweed, beans, tofu, shrimp, scallops, salmon, tuna, chicken (if you eat these animal products), etc. I made roasted pepper sauce to accompany this dish, but if you don't want to take the extra steps to make the sauce, thousand island or ranch dressing or ketchup would also work. Spelt Seed Bread

A combination of two recipes I developed. You can use unsweetened almond milk, soy milk or hemp beverage instead of the 1% milk. Honey can be substituted for the white sugar, if desired. Makes a 2 lb. loaf that almost fills my 3 lb. Black and Decker loaf pan. I haven't tried a 1 lb loaf in my old B&D bread maker with a 1 1/2 lb. loaf pan but I suspect it should work. 1 cup of seeds is needed. The recipe below is what I use but you should be able to use any combination of seeds you have available to make up the 1 cup.

Quesadillas De Camarones (Pioneer Woman)

Wow are these terrific. I never thought about making shrimp quesadillas, and I wish I saw this recipe sooner. I didn't use as much butter as the recipe called for, and I found my griddle worked great the whole way through just by starting with a little butter in the pan. I also didn't find it needed any salt because the enchilada sauce was salty enough. I served this with guacamole and salsa. Quinoa With Spinach, Tomato and Chicken

A healthy alternative for the gluten-allergic, the lazy college-student. It's so simple, you just cannot go wrong with it. Regarding the quinoa: If you plan on making a lot of these salads, it's advisable to cook the quinoa in a big batch and store it in the fridge. It saves a lot of time because before cooking you have to rinse it extremely well to get rid of the bitter coating.

Butter-Glazed Asparagus

Let the flavor of the fresh vegetable shine through when you combine chicken broth and butter to make a light and flavorful glaze to coat tender-crisp asparagus.
