Crock Pot Chicken Tortilla Soup

This is a simple recipe that is more of a "Stewp" than a soup because it's nice and thick. I spice it up by using the ingredients marked "hot" or cool it down by using ingredients marked "mild". The choice is yours. Serve topped with dollop of sour cream and freshly baked corn muffins.

Drunken Peaches (Canning)

Adapted from "Food in Jars". Not nearly as boozy or as sugary as the ones my grandmother used to make, just enough to give them flavor. I use brandy, but the original recipe called for bourbon. Rum would work well, too, as would a cinnamon stick, some cardamom pods, coriander seeds, or a few whole cloves in the syrup. I use four pounds (nine pieces in a box at Sam's Club) of large peaches and get five pint jars.

Turshi Khiyar (Iraqi Pickles)

These are traditional Iraqi pickles. Pickled veggies are usually served as part of a typical Iraqi meal. The spice mixture in these makes them irresistible. Also, the method used here can be used for other veggies as well.

Sun-dried tomatoes, either in olive oil, seasoned, or plain, add a gourmet touch and great flavor to many dishes and salads. But the price in the stores is exorbitant! Did you know it is incredibly easy to make your own sun-dried tomatoes at home with no special equipment? The quality can be better than any you've bought and now you have an easy way to use your excess tomatoes, as well as have them for use in the winter. They make excellent gifts, too.

Gruyère, Apricot Jam, and Toasted Walnut Panini

It may seem like an unusual combination, but once you've tried this sweet, nutty sandwich, you'll be hooked. If you don't have a panini maker, cook the sandwiches in a skillet and weigh them down with another pan. Or you can wrap them in foil and cook on the grill with a weight on top. Poblano-Stuffed Bacon -Wrapped "Lazy" Poppers

A real taste explosion! This is a variation on a Rachel Ray recipe for jalapeno poppers. However jalapenos sound too hot to me to enjoy the rest of the flavors, so I substituted poblanos--hence the name since the larger pepper must lay on it's side! It still works great on the grill--though you might want it on a perforated pan so the bacon on the bottom doesn't get too black. The bacon doesn't always wrap around the size of the pepper, so I used toothpicks to hold in place. My family likes turkey bacon and sausage, but adjust to your taste.
