I was looking to use some my kitchen staples for a easy mid-week dinner that would come together quickly, but still made the family happy. What I found was a good "Company's Coming for Dinner" recipe to serve any day of the week! It can be made either low fat or low carb by using either lite or nonfat sour cream and mayo, or not.The flavors really come together nicely whichever way you choose!

A quick, easy, and tasty supper. It's very forgiving, so you can adjust the proportions to your taste; I'd definitely add more olive oil and sage than called for. If you can't find/afford Fontina, substitute Monterrey Jack. From Martha Stewart's Everyday Food.

Everyone is always really impressed when I make falafel, but they just don't know how incredibly easy this is to do using a food processor and baking instead of standing over the stove. The texture will, as a result of baking, be non-traditional for those looking for an authentic fried ball. But you do save the time, effort, and calories (if you're concerned about it). Great to eat on their own with yoghurt sauce or in a pita with tomatoes and cucumbers.

Cook's Country just published an excellent technique for super-crispy baked chicken wings but their sauce choices didn't appeal to me. I wanted something garlicky and not sweet. This is what I came up with, and it was pretty tasty!

Adapted from a recipe in Faith Durand's "Not Your Mother's Casseroles." You need 1 lb of peeled potatoes, so you should start with about 1 1/4 lb. You can double this and make it in a 9x13 pan.
