Garlic Mustard Mahi Mahi (Mahimahi)
Apr 3rd 2013, 19:10

This is a modified recipe from Food Network--and so super yummy and easy! I like to serve it on roasted asparagus (but have also served it on a bed of green beans or even peas) with a multigrain roll. This is easy enough for a weeknight and good enough for company!

One of my college roomies gave me this recipe a long time ago and it remains a favorite. Now, 20 years later (gasp!) my children love it, too.

Homemade Western Style Salad Dressing
Apr 3rd 2013, 14:08

I found a recipe on cooks.com and tried it. It had a flavor very close to the name brand stuff in the store, but I thought it was a bit too thin. The second time I made it, I had to substitute rice vinegar for the cider vinegar and I messed around with it until it was to my liking. I think I prefer it with rice vinegar, although if you don't like rice vinegar you might not like this dressing made with it. Use cider vinegar (1/4 cup) instead. Xanthan gum is an emulsifier and is derived from corn so people with corn allergies probably can't have it. But, it gives it that "store bought" consistency and does not affect the flavor. Xanthan gum can usually be found in supermarkets, either in the "gluten free" section or baking aisle. Bob's Red Mill makes it. Co-ops and natural foods stores should carry it as well.

Sugar Thins
Apr 3rd 2013, 12:46

These sugar cookies are my husband's favorite comfort food. His mom made them for Christmas every year. I continue the tradition, but I make them for all the other holidays as well. The secret to getting these cookies perfect is to keep the dough cold and roll them very thin.
