Forevermama's Meditterranean Vegetable Terrine

All the different vegetables in this recipe are fabulous and evoke perfect Mediterranean flavors. It's always a favorite when I've served it at dinner parties or regular days. Some of the steps can be broken down and made ahead to make it a breeze. I have not included the overnight refrigerator rest time to the total amount of prep. time.

Chop Chop Beef Stir Fry

This is from Hungry Girl, and according to her only has 293 calories vs the 437 that food.com calculates! Don't know where the discrepancy is since there isn't added cooking oil? Yet it still manages to taste good. The 30 minute prep time includes the 15 minutes of marinating time. Quick, easy, and yummy!

Hot Cross Buns (No Knead)

This recipe saved me when my stand mixer died on me and I wanted fresh buns for breakfast. I was worried these wouldn't rise, especially with only 1/2 tsp yeast, but they turned out very well. The original recipe come from http://swallowtail.org/dairyfree/ but I added a bit more spice. So little work for such great results! Make sure you start these the night before you want to bake them. Prep time does not include rise times.

MOST ALLTIME FAVORITE! Italian Cream Cake

I used to make an Italian Cream Cake prior to making this particular recipe for many years that I swore was the best. Well I was wrong, because since I had the good luck in finding this recipe I've no longer gone back to the older cake recipe. Found it in "Taste of the South" magazine some 5 - 6 years ago. It's one of Trisha Yearwood's family recipes that was featured. I'm not even sure if she's given it in her cooking TV show. I've added a couple of little changes that I believe gave it a couple of extra points. But anyway, this cake is unsurpassed perfection on a plate and one I know I will treasure for many years.

All Natural Red Velvet Cupcakes

Like red velvet, but not all the dye? Kid with Red 40 sensitivity? This is the recipe for you. Found online. Not quite as red (sometimes it looks a little dark purplish, but it's really close. It doesn't taste beety at all - stays very moist and my son loves that he can have "red velvet" again!

Funeral Beans

Long ago, this recipe was taken to church funerals to feed large crowds. Today, this tangy bean mixture is still pleasing crowds no matter what the occasion. They are great with BBQ or ham. I like to double the batch and make them in in a crockpot.

Yummy, light vegan dish. You can add lentils or chickpeas to the mix to bulk up the nutrients. Just add cooked ones to the sauce when it's simmering. From Spark recipes.

Strawberry, Goat Cheese and Roasted Walnut Salad With Strawberry

I was inspired by the delicious salad with strawberry balsamic dressing that my favorite local pizza restaurant serves. Feel free to make changes to your liking. For example, you could use apples instead of strawberries, a different kind of cheese instead of goat cheese, or add blueberries. You can use 4 Tbsp of olive oil instead of the olive oil/flax oil combination, but the dressing solidifies if you store it in the refrigerator. American Cheese Crisps

Taken from http://www.genaw.com/lowcarb/cheezits.html You can sprinkle a pinch of spice on the slice before microwaving to flavor it. Basil, black pepper, garlic, onion, taco seasoning. Anything you can imagine. I was trying to figure out what to do with American cheese and this makes it actually palatable.
