The original recipe appeared in Our Best Recipes, published in 1978 to compile the previous year's Southern Living recipes. My Best Production of 1978 called tonight to ask me to dig up this recipe for him. Even as a picky toddler, he loved it.

From my mom's friend Miriam Raff. A nice variation on your regular borscht. Substitute fresh for all the canned stuff and it is even yummier. Refreshing summer soup.

Beet Bread Pudding

You want to use stale rye bread for this. If you haven't any, just toast or bake and let cool. Roasted beets make everything sweeter and nuttier. Unusual, yet tasty. It's both sweet and savory; good for those times when you want dessert for dinner. Prep time does not include roasting the beets or making the bread stale. Do both of those yesterday. Prep time does include the part where you let the bread soak. Whisk the eggs, grate the beets and have a drink while that's happening. Adapted from Sheila Lukins' Around the World Cookbook. She translated the recipe from a Cyrillic recipe card.

Matzo Potato Dumplings

Great for Passover. Serve with browned butter or other sauce as a side dish. To use in soups, just boil in the soup broth instead of water. You can make the potatoes in advance and keep them cooled in the fridge. Adapted from New Settlement Cookbook.

Russian Tea With Fruit

This tea uses preserved fruit to give it added sweetness and taste. The lemon helps balance out the sweet. You can substitute strawberry or raspberry preserves if you prefer. Using loose tea allows the leaves to steep better. Don't use a delicate tea for this. Adapted from the New Settlement Cookbook.

This is from a Facebook posting that came from a PerezHilton.com article. They are egg-less, dairy-less, flour-less, and with no added sugar! Raisins are optional if being made for small kids.
