Banh Mi Burgers

I whipped up these burgers for a weekend meal after a Saturday morning visit to the farmer's market. A peek in the fridge told me I had baby cukes to use. They aren't traditional, but they were a hit and instantly became a favorite with the hubby and me. Burgers can also be cooked on the stovetop. Grilling will add a nice flavor, and I prefer charcoal for a nice smoky finish.

Barbecued Beef for Sandwiches

This recipe has been a family favorite for years. Serve on hamburger buns that have been buttered on both halves, and lightly browned under broiler. Freeze some for lunches or dinner in a hurry.

This dish is not spicy hot, bit there is a little zip in this sauce. You can substitute ground beef for the stew meat.

Barbecued Beef Sandwiches

This recipe came from a military wife almost 30 years ago (Thanks Elise!) and it couldn't be much easier. Simply combine all ingredients and cook for 3 hours, then shred the meat. Serve it on buns of your choice...and then sit back and take in the compliments! Everyone loved this recipe, and I've used it at fund raising events with great success! Excellent with potato salad and coleslaw.

I love having pizza dough stocked up in our freezer. Just throw it in the fridge in the morning and it's thawed and ready to shape for dinner in the evening. Even better is having pizza toppings ready to toss on for a quick meal. Such is the case with this pizza. As Josie suggested wen she created this chicken parmesan one night, this pizza is perfectly simple when you have leftover chicken. Combine the chicken with some marinara, mozzarella and parmesan for a delicious weeknight meal.

Perfectly Puffy Butterscotch Chocolate Chip Cookies

You must know that my favorite cookies are the Perfectly Puffy Chocolate Chip Cookies. They are Bill's favorite, too. But, you must also know that I played around with different variations of it and this is one of my favorite variations. It's just a simple substitution of butterscotch pudding for the vanilla, then adding in butterscotch chips to the batter. I'll use this moment, as well, to give you some advice about achieving the puffiness of the cookies. A few weeks ago, someone suggested that if you are not getting puffy cookies then you should check your baking soda. I found this tip to be quite helpful as I had flat cookies for the first time from this recipe and then the next day made them again with a new box of baking soda with puffy results. Many of us like to hold on to our baking soda for over a month, but for the sake of these cookies I would ensure your baking soda has not been opened for more than a month. Enjoy!

Papas Rellenas (Cuban Stuffed Potato Balls)

About these fried Cuban potato balls. More popularly named Papas Rellenas, they are basically mashed potatoes formed into a ball and filled with a seasoned ground beef (picadillo), the fried to gold perfection. After searching high and low for a promising recipe, I decided not to follow just one, but to combine my research and just go from there. Because I try to avoid the messiness of frying food at all costs, I decided to try my hand at oven 'frying' them, which basically means just baking them at a higher temperature for about 20 minutes. I didn't really love the turn out, but I think it's because of the Panko bread crumbs. Normally, I love using Panko for breading, but not with these. So, lessons learned here? Stick with regular bread crumbs or flour, and fry these babies. You don't have to have a deep fryer to do so. Instead, let them fizzle in a layer of oil that is only deep enough to cover half the ball, then flip once during frying. These take a while to form each ball, but once you have the plate full of fried goodness, you'll forget about all the labor.
