My kids talk about helping me make these all year. To make cookies in the shape of a Christmas Tree, you will need a cookie press. You can also roll out the dough and use a Christmas Tree shaped cookie cutter. The candy cane filling is what makes this cookie special. This recipe makes 2 dozen sandwich style cookies. I realized that like pretty much everything else I love to eat, I should be able to find it on the internet. Imagine my surprise when I found out you could cook it like a meatloaf and not on a spit! True gyros should supposedly be made with lamb and beef, but I've seen everything from turkey and pork added as well. I'm going to try it as a meatloaf in the crockpot and then freeze it pre-sliced with pita bread and then make tzatziki sauce to take wit me to work. The bread was nice and tangy from the yeast, and perfectly buttery and chewy — like beer bread. But then the bread also had a nice subtle hint of pumpkin, with a few little spices — like pumpkin bread. The best thing, though, is that it is not overly sweet, like many pumpkin breads. Rather, there is just a hint of sweet and a very subtle hint of pumpkin.
