Candy Cane Filled Christmas Tree Cookies

A Christmas tradition at our house. My kids talk about helping me make these all year. To make cookies in the shape of a Christmas Tree, you will need a cookie press. You can also roll out the dough and use a Christmas Tree shaped cookie cutter. The candy cane filling is what makes this cookie special. This recipe makes 2 dozen sandwich style cookies. (The dough should be enough to make 4 dozen individual cookies.)

Gyro Meatloaf in Crockpot

Gyros are on of my favorite sandwiches. I realized that like pretty much everything else I love to eat, I should be able to find it on the internet. Imagine my surprise when I found out you could cook it like a meatloaf and not on a spit! True gyros should supposedly be made with lamb and beef, but I've seen everything from turkey and pork added as well. I'm going to try it as a meatloaf in the crockpot and then freeze it pre-sliced with pita bread and then make tzatziki sauce to take wit me to work. FYI: I have not made this recipe yet.

Pumpkin Beer Bread

This interesting sounding bread was described by gimme some oven (which is also were it comes from) truly, this pumpkin beer bread recipe highlights the best parts of both pumpkin bread and beer bread. The bread was nice and tangy from the yeast, and perfectly buttery and chewy — like beer bread. But then the bread also had a nice subtle hint of pumpkin, with a few little spices — like pumpkin bread. The best thing, though, is that it is not overly sweet, like many pumpkin breads. Rather, there is just a hint of sweet and a very subtle hint of pumpkin. The perfect bread to be served with an autumn dinner, or with some nice sweet butter.

Fall Foliage Salad for 1 (Vegetarian Friendly)

For young kids and those not so young kids. From spoonful.com. Switch easily to a vegetarian salad by subbing your favorite vegetarian protein: tofu, egg, tempeh bacon, etc. Great use of leftover turkey from Thanksgiving. Note: You will need autumn/fall leaf-shaped fondant cutters. I used mini fall leaf cookie cutters from my craft stash.
